Really tasty breakfast dish, a soft cooking chorizo works best with this recipe

method

  1. Peel your sweet potatoes and using a cheese grater, grate into a mixing bowl

  2. Melt your butter and pour onto your sweet potatoes and season with salt and pepper

  3. Mould your grated sweet potato mix into a shallow Yorkshire pudding tin, making 4 rosties and pop into a hot (200 degrees) preheated oven for 20 minutes

  4. Remove your yorkie tray from the oven and crack an egg on top of each one of your rosties and chuck back in the oven for 7/8 minutes

  5. Chop up your chorizo and pop into the oven for 6/7 minutes, you only want to soften and warm the fat

  6. Pop your baked eggs and chorizo onto a plate, pinch of salt and a crack of black pepper and you're good to go, serve with chunky toast
