Super tasty roasted cauliflower with a punchy gremolata dressing
Preheat the oven to 200 degrees Gas Mark 5
Place the whole cauliflower on a tray or in a small frying pan.
Drizzle with olive oil and lemon juice and sprinkle with salt
Place into the oven for 25-30 minutes
Finely chop the parsley and add to that the lemon zest
Finely chopped garlic and diced chilli
Add a good glug of olive oil and season to taste
Remove the cauliflower from the oven and drizzle with the gremolata, serve.
