  1. 1. Separate the yolks from the whites, leave your yolks in the shell

  2. 2. Pop your whites into a clean bowl, and whip to stiff peaks, you'll want to use an electric whisk or table top mixer, unless you're a machine, then do it by hand, divide the mix into 2 cloud-like shapes on a baking sheet, and make a little indentation for your yolk to sit then into a hot oven (180C) for 4/5 minutes until the whites start to brown, then carefully add your yolks and pop back into the oven for a further 1 minute and serve...
