  1. 1. This couldn't be easier, Roll out your cookie dough in between 2 sheets of grease proof paper, make sure its nice and thin otherwise it won't roll properly, then open your croissant dough and roll out, cut along the perforated lines

  2. 2. Cut your cookie dough into the same shape as your triangle croissants then lay the cookie on top of the croissants and roll into the classic shape, place onto a baking sheet and brush with your egg yolk, pop into a hot oven (180C) for 10/12 minutes
