Cajun Grilled Courgettes

This vegan treat works equally as well roasting in the oven...

- 1. Split the courgettes length ways and gently score the flesh, rub with your cajun spice mix and drizzle with olive oil, pre-heat your BBQ or oven (if oven roasting pre-heat to 200C)
- 2. Place the courgettes flesh side down onto the BBQ bars and pop a lid on, cook for 5 minutes then flip over and cook for a further 2 minutes, if oven roasting pop into your hot oven for 20 minutes flesh side up
- 3. Meanwhile prepare your salad by chopping your tomatoes in half and your spring onions on the diagonal, add a pinch of salt and a crack of pepper and squeeze your lime juice in and give a good mix, serve along side your grilled courgettes...
