BBQ Pork Fillets

This requires a bit of prep but we promise you its totally worth the effort...
30 - 40minutes
20 - 25minutes
- 1. In bowl combine the Cumin, Chilli flakes, Paprika, lemon juice and zest, minced garlic, thyme leaves balsamic and honey and whisk well
- 2. Prepare your pork fillets removing any sinew and cut each fillet into 3 cannons and place in your marinade, cover and pop into the fridge for minimum 1 hour, if you can, prepare this the night before
- 3. When you're ready to cook, pop your pork on to a hot barbecue or under a hot grill, until nicely charred, this should take about 10-15 minutes, to get a beautiful blackend glaze use the remainder of your marinade and brush the pork every couple of minutes while cooking
