  1. 1. In bowl combine the Cumin, Chilli flakes, Paprika, lemon juice and zest, minced garlic, thyme leaves balsamic and honey and whisk well

  2. 2. Prepare your pork fillets removing any sinew and cut each fillet into 3 cannons and place in your marinade, cover and pop into the fridge for minimum 1 hour, if you can, prepare this the night before

  3. 3. When you're ready to cook, pop your pork on to a hot barbecue or under a hot grill, until nicely charred, this should take about 10-15 minutes, to get a beautiful blackend glaze use the remainder of your marinade and brush the pork every couple of minutes while cooking
